CHICKEN AND CHORIZO STEW

A healthy dish, with a chicken and vegetable base and the special touch given by Chorizo Palacios.

Chicken and chorizo stew

Ingredients

  • 500 grams of chicken pieces
  • 15 thin slices of Chorizo Palacios (buy here) 
  • 4 potatoes
  • 1 bay leaf (optional)
  • 1 onion
  • 1 or 2 cloves of garlic
  • 3 or 4 tablespoons of olive oil
  • 1 glass of homemade or ready-made tomato sauce
  • 1 small glass of white wine
  • A pinch of paprika
  • A pinch of salt

Method:

1. Heat the oil in a pan and add the chopped onion and garlic. Fry lightly until golden brown.

2. Add the chicken and sauté for 5 minutes.

3. Add the tomato sauce, the paprika and the chorizo. Stir well and add the glass of white wine.

4. Peel the potatoes and cut into cubes. Add them to the pan and cover with water. A small bay leaf will add flavor.

5. Boil for 15 to 20 minutes, stirring every now and again. Season with salt, remove the bay leaf and serve piping hot.
