This cheese is made with 100% sheep’s milk La Leyenda is a small Spanish cheese produced in La Mancha. The cheese is made from raw sheep's milk and it's aged for a full year before consumption. This is made the same way that a young Manchego would be except with dark veins of black truffle criss-cross the interior of this pretty cheese, infusing yet not overpowering the classic nutty, buttery flavors of a fine sheep's-milk cheese with the warm earthiness of truffle The texture of the cheese is firm and slightly crumbly, while the flavors are buttery and nutty with hints of raisins. It's recommended to pair it with sweet white wines or medium-bodied reds.
